Snickerdoodle Blondies

Since it’s the middle of Brownie Week, let’s take a break from all the chocolate.

I didn’t know that blondies even existed until my sister got an Easy Bake Oven. Growing up in a house dominated by chocoholics, I only ever knew brownies. But with the Easy Bake Oven you have to buy the mixes in sets, which means no brownie mix without blondie mix too. Once we had used up all the brownie mixes, I ventured to try the blondies. Not being a chocoholic myself, I loved them. From then on I compared all blondies to Easy Bake blondies, and no other desserts ever taste the same as Easy Bake desserts. I’m not sure I want to know why that is.

These blondies don’t taste like Easy Bake blondies at all. They taste like cinnamon…lots and lots of cinnamon. And coconut sugar, which tastes a lot like brown sugar, which goes perfectly with cinnamon. These are really easy to make, and they don’t require any oven, light-bulb powered or otherwise.

Snickerdoodle Blondies

Makes 8

3 3/4 cups raw rolled oats

1 tsp cinnamon

1 tsp vanilla bean powder

1/8 tsp salt

1/2 cup coconut nectar

2 tbsps coconut sugar

1/2 tsp cinnamon

  1. Combine the oats, cinnamon, coconut nectar, vanilla, and salt in the food processor. Process until it forms a ball.
  2. Press into a lined loaf pan.
  3. Mix together the coconut sugar and 1/2 tsp cinnamon. Sprinkle on top of the blondies and press in gently.
  4. Refrigerate for at least an hour before cutting and eating. Keep in the fridge.
