It’s not often that I look through a recipe book and have this much trouble deciding what to try first because I want everything right now. It’s fun, it’s funky, it’s totally my style with lots of fruit-sweetening, simple short ingredient lists, and veggies being used like you’ve never seen!

It’s Hide and Seek Vegetables.

Isn’t that the cutest name!? This is Kyra from Vie de la Vegan‘s new ebook filled with 15 vegan recipes that all contain veggies in some form. Some are deeply hidden under sweet disguises and others flaunt their veggie side a little more openly while still looking extra delicious.

There is a little bit of everything in this book–breakfasts, smoothies, savory meals, and sweets. And a little bit of veggie hiding under every mouthwatering presentation. Zucchini made ice creamy. Pizza with pumpkin. Eggplant turned cake. And chili with an ingredient list that is more than half veggies. I was seriously blown away by how much ingenuity is packed into 21 pages!

Even the savory things were calling to me, mostly because they are all so simple to make. I’ll put hours into a cupcake, but when it comes to meals I want easy. All the meals in this book have short ingredient lists and require very little hands on time.

I had the toughest time narrowing it down to this bowl of oats, but it was a very good choice! I’m all for cauliflower in unusual places, but usually I blend it and use it as a creamy component. This recipe for Cauli-Berry Oats utilizes the texture of finely chopped cauliflower florets to sneak veggies into a berry-laced breakfast bowl.

I won’t tell you that the cauliflower is completely undetectable and you would never know it’s in there. What I will tell you is oats are good, but oats with cauliflower are even better! There is something about the texture the cauliflower adds that I enjoyed immensely. Whole bowl devoured in record time. And I’ve already made it two more times since!

Cauli-Berry Oats from Hide and Seek Vegetables

Ingredients

Scale

  • 1/2 cup rolled oats
  • 1/2 cup cauliflower (chopped very finely)
  • 1/2 cup strawberries (diced)
  • 1 1/3 cup plant milk
  • 1/2 tsp stevia or to taste (*see note)

Instructions

  1. Combine all ingredients in a small saucepan.
  2. Cover and cook over med­high heat for 5­-7 minutes, stirring a few times, until the cauliflower bits are tender.
  3. Optionally, blend after cooking.

Notes

I used about 1 tbsp of maple syrup instead of the stevia just out of personal preference. She notes in the book that you can use coconut sugar, maple syrup, or date paste in these recipes instead of the stevia.
